JPD production is limited to 3,000 pigs a year. This guarantees a thorough selection process, in search of the best quality. JPD Pigs are wild animals that freely roam in their natural environment and feed on acorns.

Suggestion: Perfect as a starter accompanied by Picos, typical Andalusian breadsticks.

Jamón de Bellota 100% Ibérico PATA NEGRA is the most distinctive product of Juan Pedro Domecq, the 5th generation, family-owned company. Although the Domecq family arrived in Spain in 1730, the production of Iberico ham is actually pretty recent. It's in 2000 when Juan Pedro Domecq Solis and his son decided to start their ham business taking advantage of their long lasting experience in the breeding of pigs.

The traditional Iberico Bellota Ham Production Process

The production process is entirely artisan and is aimed at providing final consumers with the best tasting experience. This highly sought after breed of pig is extremely exclusive as the produciton is limited to 3,000 pigs a year.

Acorn fed pigs spend their lives being reared in the wild and fully develop in their natural environment. They benefit from 120 days of feeding, which is twice as much as the legal requirement of just 60 days. This is why the exquisite aroma and flavour of authentic Juan Pedro Domecq ham is much more intense than any other jamon Iberico.

These wonderful hams are cured over a period of 40 to 52 months in the company's own natural cellars in the Jabugo area under the constant supervision of the  “Maestro Jamonero” (Master Ham-Maker). This is a true art form, perfected and studied over time to create what is a premium Spanish masterpiece.

What is Iberico Bellota Ham?

What is Iberico?

First off 'Iberico' ham comes from the black-footed Iberian pig, which is a completely different breed of pig from a 'Serrano' ham. The characteristics of the actual meat itself is what makes the Iberian ham distinguished and highly sought-after. It's richer, stronger, darker in colour, with fine veins of delicate fat running through the meat.

Not all Iberian pigs have the luxury of being free range, so check what you are buying as it does make a difference.  Most Jamón Ibérico is made from Ibérico pigs who like most lives off of a diet of corn and other feed. It is still an excellent ham, benefiting from the noble lineage of the Ibérico pig, but not quite as exquisite as our authentic Iberian Jamón . 

What is Bellota?

'Bellota', simply means acorn in Spanish. Why is this important? Well, in actual fact it is highly significant as any authentic Bellota branded ham has been fed on a diet solely consisting of acorns. Spanish ham can be Iberico ham (the black-footed Iberian pigs) but does not always have to be 'Bellota' as sometimes they are not always fed on just acorns. This does actually change the texture and flavour of the meat is even more gratifying; hence why Bellota is highly sought after.  

What does Juan Pedro Domecq Iberico Bellota Ham taste like?

Once you taste this ham you instantly know it's a treat. A cut above the rest. Judges at the 'Great taste awards' describe it as: 

"Sweet caramel notes layer with dark, aged ham and a nuttiness that lasts long into the finish"

The judges also marvelled and applauded the ham’s deep red colour, which is marbled with silky white fat. To some this may seem extreme; however, for real foodies chasing gastronomic excellence, this is the pinnacle of artisan Spanish hams and offers ultimate gratification.

Our Tip: We suggest you take out of the refrigerator at least 1 hour before serving as this Spanish ham is best served at room temperature. You can even try heating the plate slightly first so that the oil slightly seeps out of the meat.
