Spanish Cuttlefish in Olive Oil - Los Peperetes de Jesus Lorenzo - Villagarcía de Arousa (Pontevedra) – Galicia

This cephalopod, as it happens with octopus, requires a specific production process. In addition to a thorough cleaning, it needs to be cooked in very salty water to achieve the desired texture and flavour. It is then parted in two pieces, which are cooked separately and then presented in the can as a whole. The liquid in the can is purely olive oil.

Ideal as an ingredient in paellas, salads, on their own or grilled.

It should be accompanied by a good white wine.

Fishing Season: July-January
