Spanish Spicy Sardines in Olive Oil - Los Peperetes

Spicy Sardines from the Galician Sea Inlets - 120g

These sardines are produced following the traditional method: once thoroughly cleaned in a solution of warm water and salt, they are fried in olive oil, canned and covered with a sauce consisting of olive oil and chilli peppers.

Suggestion: spread some freshly chopped tomato on toasted bread and top it with sardines, parsley and coarse salt. Really easy and tasty tapa.

Spanish Small Spicy Sardines - Los Peperetes de Jesus Lorenzo - Villagarcía de Arousa (Pontevedra) – Galicia

Once the small sardines have been washed in warm salt water and have been thoroughly cleaned, they are fried in olive oil until the desired texture is obtained. This process prevents sardines from breaking into pieces. They are then poured in cans filled up with a sauce consisting of olive oil and chilli peppers.

The size of the sardines depends on the period when they are caught. Sizes increase at the end of the fishing season.

These sardines get better and better over time. Our advice is to leave them stored for a few months before consuming them.

Fishing Season: June-September.

Source: Vilaxoan and Rianxo Fish Markets (Ria de Arousa).
