Cantabrian anchovy from Santoña, in the heart of the Biscay Bay, is known as the best anchovy in the world. 

The authentic anchovy fillets come from young anchovies caught only from March to June when fish is at its best in terms of fat content and flavour.

At Don Bocarte they use the minimum quantity of salt in order to preserve their natural flavour.

Suggestion: pour the anchovy fillets well distanced in a serving dish and drizzle with extra virgin olive oil.

Tip: keep refrigerated and consume within 2 days after opening.

Don Bocarte – Santoña (Cantabria)

Don Bocarte is one of the most distinctive fish preserves company of Santoña. It is said that the best anchovy of the world comes from this little village in the heart of the Bay of Biscay.

Since 1997 Don Bocarte selects only the best anchovies caught from March to June, when their flavour and their content of fat are at their best.

They developed their own production methods, using artisan techniques that ensure that caught fish don’t suffer, which improves both flavour and texture of their products.   

In order to preserve the natural flavour of their anchovies, Don Bocarte keeps the salting phase salt as short as possible.

The cleaning and filleting phases are still handmade as well as the quality control.

How to Enjoy Cantabrian Anchovies

The characteristic flavour of Cantabrian anchovies is a result of their traditional preparation and the fact that they are cleaned by hand.

Cantabrian anchovies can be used quickly and easily to create countless dishes, as they combine well with many foods, such as tomatoesmild cheeses such as Mozzarella or Creme Fraiche, stronger chesses such as both kinds of Idiazabal, garlic and “piquillo” peppers.

They are very versatile and can be used for simple appetisers and elaborate main courses.

The texture and intense flavour of anchovies means that very fruity, sharp, light rosés are the ideal complement for those dishes where anchovies play the leading role.

My son makes his own bread, he cuts a thick slice of butter and lays the anchovy on the butter. With manzanilla sherry. They are the best anchovies we have ever had. We order them online and they always arrive promptly
