Torta de Dehesa – Hacienda Zorita - ~ 250g
Soft and made with raw ewe's milk, this cheese was awarded a Super Gold Medal at the 2013 World Cheese Awards and a Gold Medal at the 2016 edition.
Its aroma is clean, balanced and intense. Texture is creamy. It's characterised by a lactic flavour with hints of cereals.
The milk is curdled using the desiccated flower of the wild thistle Cynara Cardunculus.
Suitable for Vegetarians.
Suggestion: perfect as a starter, it pairs particularly well with a glass of sherry or a chalice of oak aged white wine such as Blei Clos Martina Priorat DO.
Tip: take out of the refrigerator at least 2 hours before serving, cut the lid off, scoop it out with a spoon and spread on toasted bread.
