Artisan Smoked Idiazabal Cheese – Idiazabal D.O. – Sheperd’s Cheese From Raw Ewe’s Milk -  ~ 275g Wedge

Cheese produced by families of shepherds who adhere to the Artzai Gazta Association.

Each small producer has its own herd of sheep of the native Latxa breed. They produce their unique Spanish Idiazabal Cheese using their own sheep's raw milk.

Cheese is cured for a minimum period of 60 days. Its aroma is strong and powerful.

Suggestion: it is superb with a glass of bodied red wine and it pairs well with all kind of nuts.

Tip: pull out of the refrigerator at least ½ hour before serving.

Spanish artisan cheese made from raw ewe’s milk and smoked using beech or hawthorn wood under the regulations of the Idiazabal D.O. and the norms of the Artzai Gazta association.

It is cured over a 60 days period. At the end of the ripening period its weight stays in a range of 1.1 to 1.8 kg. Being smoked, its rind turns into a brownish-yellow colour.

It may have a few, irregularly distributed and extremely small, uneven holes. Its aroma is strong and powerful.

All the Idiazabal D.O. cheese wheels are identified with a numbered label issued and controlled by the Regulatory Council.
