This real Artisan Salchichon is made from Iberian breed pigs fed on acorn or grass over the so-called “Montanera” period, that falls in autumn, when acorns fall from oaks.
Extremadura, where Coto de Galán are located, is considered one of the best-preserved ecosystems in Europe. In this land filled with oak trees, pigs roam freely and grow in their natural environment.
Its curing period is around 3 months.
Suggestion: perfect as a starter, alone or accompanied by Bread Rubbed with Tomato.
