Xolís is a typical cured sausage from Pallars, a region located in the Catalan Pre-Pyrenees.

It’s made from the finest pork cuts: ham, loin, dewlap and belly. Slowly air dried for 3/4 months in natural cellars and stuffed into natural casing.

It’s Cal Tomas’ most distinctive product. It was awarded 1 star at 2017 Great Taste Awards.

Lactose-free and gluten-free.

Suggestion: taste it thinly sliced on top of "Pa amb Tomàquet" drizzled with Extra Virgin Olive Oil. It really makes a difference on a charcuterie board.

Xolís from Pyrinees - Cal Tomás - Pobla de Segur (Catalonia)

Cal Tomás is a family business devoted to organic farming and cured meats production. Its origin dates back to the beginning of the 20th century when the Gordó family started a butcher shop in La Pobla de Segur, a small town located in the Catalan province of Lleida. The company is currently run by the 3rd and 4th generation of the family.

Made from the finest pork meats, Xolís del Pirineu is Cal Tomás’ most distinctive product. Its artisan production method hasn’t changed over the last 100 years. It’s hand pressed to obtain its typical flattened shape and then air dried in Cal Tomas’ own natural cellars. Its produced in winter; usually in December and January.
