PIQUILLO PEPPERS

Piquillo Peppers are a special kind of red peppers with a triangular shape. Their size is relatively small, about 7/8cm, and their skin is firm and not particularly fleshy.

Piquillo Peppers are roasted and then peeled before being canned or preserved in jars. In the process it is not used water in order to keep their aroma and their taste unaltered.

They may be prepared in many different ways: stuffed, stir fried, or simply seasoned with a little bit of olive oil and parsley as a side to meat and fish courses. In Spain they are frequently combined with “tortilla de patatas”, the most typical local omelette.

Piquillo Peppers are an excellent culinary basis for several different Tapas. Here we suggest two really quickly and easy way to bring out their best:

Piquillo Peppers with “Bonito del Norte” and Piquillo Peppers with Cod Brandade.

HOW TO PREPARE PIQUILLO PEPPERS WITH "BONITO DEL NORTE"

INGREDIENTS

- 1 can of Piquillo Peppers, Adolfo Sádaba

- 1 jar of “Bonito del Norte” in Olive Oil, La Lata de Braulio

- 1 bag of Crunchy Bread Toasts T’Olis

- 1 Extra Virgin Olive Oil - Conde de Argillo Malla Dorada PDO Sierra Magina

PREPARATION

Place a Piquillo Pepper on a small slice of toasted bread and put on top a cube of “Bonito del Norte” fillets. Then garnish with some chives or again with little strips of Piquillo Pepper.

Add a little bit of Extra Virgin Olive Oil and ……. les jeux sont faits.

     

HOW TO PREPARE PIQUILLO PEPPERS WITH COD BRANDADE

INGREDIENTS

- 1 can of Piquillo Peppers, Adolfo Sádaba

- 1 jar of Cod Brandade, La Cuna

- 1 bag of Crunchy Bread Toasts T’Olis

- 1 Extra Virgin Olive Oil - Conde de Argillo Malla Dorada PDO Sierra Magina

PREPARATION

The brandade is an emulsion of salt cod, slightly cooked and drained, and olive oil.

Simply stuff Piquillo Peppers with the Cod Brandade using a spoon.

Once stuffed, place them on a small slice of toasted bread and add a drop of Extra Virgin Olive Oil.
