Chicken and chorizo is a classic food pairing which we couldn’t help but celebrate! All over the world, chefs have been using the meats together as a staple for countless culinary servings. It’s a versatile and exciting combination which will complement numerous cuisines. Whether it’s a paella or pasta, pie or salad, there are so many ways to serve this food. Naturally, we had to get in on the action. Here are the best chicken and chorizo recipes.

Okay, let’s get this out in the open. Authentic paella doesn’t feature chorizo. Having said this, it is an international favourite. We’ve seen quite a funny instance of Jamie Oliver facing fierce backlash over his inclusion of chorizo in paella. We feel your pain and we do understand that this isn’t how it’s done at home. Having said that, we don’t think food should be exclusive. If chicken and chorizo paella opens the door to a wider audience to indulge in Spanish food, we can only see that as a positive. So, although the purists may cringe, here are some of the best chicken and chorizo paella recipes.

Jamie Oliver’s Chicken & Chorizo Paella

Let’s start with the dish which united a nation in distaste for one man. Despite the unauthentic approach, there’s no denying that this dish is delicious. As Jamie says himself “The Spanish can be quite protective about what is and what isn’t a paella, but at the same time, the spirit of their cooking has always been flexible to whatever meat, fish, seafood or game can be found”.   • 2 cloves of garlic
  • 1 onion
  • 1 carrot
  • Half a bunch of fresh flat-leaf parsley (15g)
  • 70g quality chorizo
  • 2 free range chicken thighs (skin off and bone out)

Unlike traditional risotto dishes, this dish is cooked from raw in the oven and resembles Paella. Add a mixture of your favourite meat and vegetables and there you have it, an incredibly tasty dish with little effort!  

Ingredients:

  • 250g/9oz cherry tomatoes
  • 1 red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 tbsp olive oil
  • 300g/10oz risotto rice
  • 4 chicken thigh fillets, halved
  • 200g/7oz chorizo, thickly sliced
  • 2 tsp chopped fresh rosemary
  • 1 litre/1¾ pints hot chicken stock
  • pinch of saffron strands
  • 8 large, raw prawns
  • salt and freshly ground black pepper

Chicken, Chorizo and Roast Tomato Risotto

The addition of roasted tomato adds a sweet element to the smokey Chorizo in this dish. A definite crowd pleaser!

Ingredients:

  • Olive oil
  • 10 cherry or baby plum tomatoes, sliced in half
  • 1 tbsp balsamic vinegar
  • 1 tsp dried rosemary, ground to a powder
  • Pinch of salt
  • Pinch of freshly ground black pepper
  • 2 shallots or ½ large onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 red chilli (optional), deseeded and finely chopped
  • 250g Chorizo sausage, diced
  • 2 chicken breasts, cut into small pieces
  • 200g risotto rice
  • 1 large glass of white wine
  • 500ml fresh chicken stock
  • 2-3 tbsp grated Parmesan cheese, finely grated

Chicken and Chorizo Risotto

  • 1 Round of Chorizo, cut into cubes

  • 1 cup Sweet corn
  • 50g Parmigiano Reggiano, finely grated
  • Freshly grated Black Pepper
